This easy 2-ingredient Earl Grey chocolate mousse is so rich, decadent and luxurious! A simple (and healthy!) dessert to enjoy after dinner when you’re craving something sweet to end your meal.

I love finding new ways to incorporate tea into desserts. Brewed tea is such a fun and easy to way to infuse a lot of aromas into a dish without using artificial flavours. I particularly love using tea (especially black tea varieties) to flavour desserts, like this one!

Earl Grey and chocolate is a delightful combination of two distinct flavours: the bold, citrusy notes of Earl Grey tea and the rich, creamy taste of dark chocolate. This fusion creates a unique and sophisticated treat that appeals to both tea and chocolate enthusiasts.

It was a while ago when I first tried Earl Grey and chocolate – I was in a small Boutique shop in London where a bar of chocolate stood out to me. I thought it was such a genius idea to infuse a tea flavour in chocolate. The thought had never occurred to me. As well as a touch of citrus, it also adds a floral taste, which together just seem to work really well with dark chocolate.

Why I love making this 2-ingredient Earl Grey chocolate mousse:

Chocolate mousse typically relies on creamy ingredients like eggs and cream to give it that velvety texture we expect when we dig into a mousse. However, as I’ve recently found out, water works just as well! In fact, it creates a lighter mousse with a more intense chocolate flavour. For anyone who loves the taste of dark chocolate (I include myself here), water works even better than cream as it doesn’t dilute the taste, richness and intensity of the chocolate.

The inspiration for this recipe came from a mousse recipe I found online that was originally created by Heston Blumenthal. A simple idea where he added boiling water to dark chocolate, then set it over a bowl of ice. Almost like an instant mousse that you wouldn’t need to set in the fridge.

Personally, I didn’t have the energy to faff around with ice (plus I didn’t have any at the time!), so I decided to make my life easier and set it in the freezer instead. It only takes 20-30 minutes for it to set to the perfect scoop-able consistency for serving, so it’s a great dessert to make when you have an unexpected guest or crave something rich and decadent with minimal time and effort.

What you need to make this 2-ingredient Earl Grey chocolate mousse:

Dark chocolate – you’ll need a good quality dark chocolate that’s 70% or over for this recipe to work. Without a high percentage of cocoa solids, the mousse won’t set and you’ll be left with a chocolate sauce instead. I prefer the taste of dark chocolate anyway, but since I’m not adding any extra sweetener, I went for a 70% dark chocolate bar. I feel anything higher would be a little too bitter for me. It depends on your preference really – if you like an 85% dark chocolate for example, you may find that works better for your taste buds.

Earl Grey tea bags – I love the taste of Earl Grey combined with chocolate, so I knew it would be a great tea flavour to use, but you can use other flavours of black tea. Alternatively you can simply use plain boiling water.

Ingredients

  • 4 Earl Grey teabags
  • 175g dark chocolate 70% or above
  • 135ml boiling water

Instructions

  • Add the tea bags to a pan and pour over the boiling water. Leave to brew for 3 minutes, then discard the tea bags.

  • Break up the chocolate into a heat proof bowl, then pour over the hot tea. Allow to sit for 1 minute, then stir until the chocolate is melted and you have a smooth mixture.

  • Chill in the freezer for 20 minutes (or in the fridge for 3-4 hours).

  • Spoon out the mixture into a serving dish. I like to use a nice cream scoop.

  • Alternatively, you can pour and set the mixture in individual dessert bowls.

  • Serve immediately for a softer mousse, or store in the fridge for later.
